We eat fish a few nights a week and salmon is definitely top on the list. There are so many great health benefits of salmon but you’ll want to make sure you’re eating wild caught varieties when possible. There are too many known contaminants and toxins in farmed fish so it’s not worth the health risk. Even some wild caught fish have become questionable but that’s a topic for another day..let’s just focus on the positive for now.
Remoulade traditionally calls for egg yolks but since we’re making this vegan option, avocados make a great substitute.
Avocados are so versatile. You can use it to make desserts, sauces, salad dressing, etc. etc. It’s also one of my favorite smoothie thickeners. Don’t let the calorie content scare you away from eating them either, even if you’re weight conscious. You won’t want to deprive your body from the nutrition packed into this magical fruit.
My husband LOVES this dish so I hope your family enjoys it as well. As far as the salmon goes, you can cook it to your preference but I like mine a little rare and I find the pan searing method to work the best. The top comes out nice and crispy but the inside is a perfect orange-y pink. Bon appetit!
