Do you have a habit of making too much food? I’m definitely guilty of this. But I’d always rather have too much, rather than too little on our dinner table. Ever since I got the Vitamix blender though, I make way too much on purpose because I know I can use the leftovers for another dish and save some time while I’m at it!
This dip is the perfect example. I love steamed or roasted beets for dinner. Not only do they taste so good, the beetroot is well known for its detoxing and anti-cancer properties, among other great benefits.
Every time I cook this, I’ll prepare about 2-3 whole organic beets and we almost always have leftovers. So this means I’ll either be making beet soup or this creamy vegan beet dip, perfect for your veggies, pita bread or crackers. You can even use it as a sandwich spread in place of your hummus or mayo.
And with the addition of hemp hearts, cashews and tahini , this dip turned out so creamy with a perfect note of sweetness. All these ingredients also make this dip a super healthy powerhouse of nutrients!
Quick note: If you’re watching your weight and/or sugar intake, be mindful of how much you eat because beets have the highest sugar content of all vegetables. But please don’t let this deter you from consuming beets because the benefits are just too great. Enjoy!
