I try to avoid canned foods whenever possible so I like to cook my beans on the stove. The cook time is a bit long but it’s really hands-off so the effort is minimal.
1/2 pound or 8 oz of dried organic black beans
1/2 onion, chopped
3 cloves garlic, minced
1 t cumin
1 t chili powder
Salt & pepper to taste
1 cup fresh cilantro, chopped (optional)
2 green onions, chopped (optional)
Soak beans overnight in the pot you intend to cook them in. The next morning, rinse the beans a few times and then add 3-4 cups water.
Bring to a boil over high heat, then reduce to medium low and simmer, covered, for 30 minutes. Add garlic, onion and seasonings and cook for another 30-45 minutes. Stir in cilantro and green onions, if using last.
Serve hot in a burrito bowl or cold on top of salads. 🙂
