If you’ve made the Vegan Cashew Cream from a previous post, you must try this easy no-bake watermelon cake. It’s also gluten-free, grain-free and most importantly, pretty to look at! 🙂
Depending on the size of your watermelon, you can make several cakes from just one melon so it’s great for parties too.
You’ll need 1 watermelon, cut into “cake layers” into the thickness of choice
Strawberries, blueberries, blackberries (fresh or frozen, defrosted)
Mint leaves (optional)
Place a cake layer on a plate (you can cut into slices in advance if desired) and top with cashew cream, berries and mint leaves.
This is probably the easiest cake you’ll ever make AND one of the healthiest!
I wasn’t a big fan of watermelons as a kid but I bet I would have become one if my mom served it in cake form. 😉
