I had my first taste of a vegan wrap with walnut “ground beef” at a Whole Foods in San Diego and LOVED it. I was never a fan of real ground beef anyway (didn’t like the fatty taste in my mouth) and I’m definitely not a fan of processed soy “ground beef” so this makes the perfect alternative for me. Scott also gives it a thumbs up so it’s boy-approved, in case you want to make a vegan taco bowl one night and wait to see if he notices. 😉
2 cups raw walnuts
1 T olive oil
2 t cumin
1 t chili powder
1 t garlic powder
Dash of cayenne pepper
Add all ingredients into your food processor and process until you get a ground meat-like chunky texture. Easy, right?
Add this to any recipe that calls for ground beef . I typically use this in my burritos, wraps, taco bowls and taco salads.
