To continue my sugar-free sweets kick lately, I decided to post my recipe for this yummy vegan cashew pudding. This is a slight variation from the cashew cream recipe I posted a few weeks ago. The taste and texture is similar but the chia seeds make this version slightly more dense and “pudding” like. If you’re in the mood for a sugar-free chocolate pudding, check out that recipe here.
OK, on to the recipe.
Here’s what you’ll need:
1 cup organic cashews, soaked for 4 hours or overnight
1/3 cup water or non-dairy milk
1 T white chia seeds
1 t vanilla extract
Blend everything in your vitamix or other high speed blender and blend until smooth. If using a Vitamix, start at variable 1 and slowly increase to variable 10. It’ll become SUPER creamy! I’m not sure how this would work in a regular blender because I haven’t tried it but it should probably work OK as long as your nuts are soaked overnight.
Chill before serving or if you’re impatient, like me, and you have a high-speed blender, throw in an ice cube or two when blending.
And while toppings are totally optional, I like the added crunch and texture from cacao nibs and raw hemp hearts.
This pudding, full of healthy fats and fiber, keeps me full for hours so if your goal is to shed some pounds or quit sugar, this is the treat for you!
Here’s a little side note on stevia…to cut down on some of that bitterness aftertaste, slightly reduce the amount of stevia used and add a dash of xylitol instead. The combination works really well and I bet no one would even notice!
And this is my final encouragement of the day: play with your food whenever possible. Food is meant to be enjoyed and savored and part of that happiness we derive from food comes in how it looks, so why not have a little fun? Come on…channel your inner child. You know you want to! 😉
