I had my first taste of vegan avocado pudding at one of my favorite restaurants about 5 years ago, I think – True Food Kitchen. Oh man, I never dreamed it could taste so good! So naturally, I wanted to give it a go myself. Talk about easy!

AND, you can make a big batch in advance. So when I decided to host a dinner party one night, I decided to make this for dessert. Unfortunately, while I was spooning the pudding into individual dishes and eager for everyone to give it a try, I made the HORRIBLE mistake of telling them it was made from avocados.
I wish I had a camera to take a picture of the looks I got from my friends. I’ve been known to be a little nutty about health conscious foods at times but they were looking at me like I had just gone too far.
Good news was that most of my guests liked it and one in particular asked for more. Sadly, one person just couldn’t get over the avocado part because he was only used to avocados in guacamole and another friend just plain refused to eat avocado for dessert. I don’t blame them…our brain has strong connections to certain types of foods and it’s tough to break that connection sometimes.
So here’s my tip. If you ever serve this at a dinner party, tell them AFTER they’ve enjoyed your creation. I promise, no one will even know it’s made from avocados until you spill the beans.
3 T raw cacao powder
1/4 cup medjool dates (or other liquid sweetener of choice like coconut nectar)
3 T almond milk (use more if needed to get the blades moving)
2-3 drops mint extract (omit if you don’t like mint)
Place everything in a blender and blend until smooth and creamy.
