This is adapted from the recipe created by the amazing and adorable Katie, from Chocolate Covered Katie. This girl is one of my absolute favorite bloggers online because she posts the most amazing dessert recipes and as a sweet tooth kind of girl myself, I need more healthy dessert inspiration if I want to eat something like this every day.
I’m also a huge fan of no-bake desserts because they’re such a cinch to make and only requires freezing time. And with the weather now surpassing 100 degrees on a daily basis in Arizona, cold desserts are the way to go.
1 cup Organic Peanut Butter (or sub with other nut/seed butter of choice)
1/4 cup coconut oil
2 scoops protein powder (I used Vega’s Protein & Greens Vanilla)
Additional sweetener to taste (optional – I found the blend of bananas and stevia in the protein powder to be sufficient as sweeteners)
Drizzle of chocolate sauce (equal parts coconut oil and cacao powder) and crushed peanuts
Side note on the protein: I LOVE this particular blend because it’s soy-free, dairy free, non-gmo, sugar-free and gluten-free. It also includes some greens which include alfalfa grass, spinach, and kale. The best part is it tastes amazing (like vanilla cake) with a perfect blend of stevia and vanilla.
Place everything in your blender (I used my vitamix ) and blend until smooth. Pour into a springform pan or other container of choice and freeze for about 3 hours or overnight. Let it thaw on the counter for at least 10 minutes before serving. You can store it in the refrigerator for a more mousse-like texture but I prefer it slightly harder so I keep it in the freezer.
When ready to serve, drizzle with chocolate sauce and crushed peanuts.
